Man, I'm gonna sound totally newbie but can someone please explain this type of attack?

Penetration ignores the bonus hit points a creature gets from being on his preferred land type. For example, if a Minotaur (red creature) is on a lvl 3 red land he gets +30 hit points. If a creature with penetration attacked this minotaur, the minotaur would not get the +30. Hope that helps.

Does that include any land bonuses because he has another creature next to him? For example you have 2 minotaurs, side by side, don't they get a land bonus of +10 to hp just for being next to one another? How do penetration attacks handle that? Thanks

Two creatures on adjacent lands like you describe give each other +10 Strength, not hp. This is called support. Penetration does not affect this.

In addition to this advice, I believe that penetration attacks do not apply to armor. So if the creature used armor, the armor HP bonus would still apply. It took me a few losses to figure that one out.
