It took a couple tries to get used to the strategy, but it's surprisingly easy to get. Don't overthink it. That was my problem.
Just play as you normally would. It might help to tailor your deck to your opponent with the appropriate "Instant Death" creatures.
Whenever you know for sure you're going to kill your opponent's monster, just give your guy a Coin of Piety. Sanctum Guard helps. Cast Aurora whenever you get the chance (a fairly cheap spell: 50G).
I chose Zagol because he's aggressive and sometimes does stupid things like attack Yetis with fire monsters. This gave me a couple of opportunities to use Coin of Piety. Decoy also helps.
I set the goal for 35,000G on Cratos. I won with 3,555G in symbols. Thanks to Aurora, both Fire and Water symbol values were at 99G. Wind was close behind.
That's medal #45 for me! I got Darkcraft and Talisman out of it! Still left on my to-do list:
2 vs. 1 3 vs. 1 Quake Beast medal (should be easy enough) Mechanical Duke 100 victories

Even easier tactic which works for the All Level 1 medal and no symbols or lands medal...Zagols Story mode board, just set up a couple of simulacrumed Old Willows or Kelpies and let him hit them, using red or blue shields until you could afford the damage. You just loop around the bottom. Use coin of piety to get the symbols, aurora. If going for 'no lands' use land transfer (use eclipse spells if the shrine gives you symbols) to get rid of your lands once you have over 8000 in G. Same for all level 1 lands except I left a Peaced Hellhound on one spot.
